1. Soak your glass noodles in cold water for 15 minutes, then drain.
2. While the noodles soak, slice your ribeye and marinate it in 1 tbsp soy sauce, 2 minced garlic cloves, 1 tsp white pepper, and 1 tsp mirin.
3. Julienne your vegetables (asparagus, carrot, sweet peppers, white onion, scallion, mushroom) into similar sizes. Cook each vegetable separately in a touch of oil until tender-crisp. Remove them from the pan and wipe the pan clean after each component is cooked. Start with the veggies first.
4. Sear the marinated steak halfway, as it will continue cooking when everything is mixed together.
5. Once all veggies are cooked, boil your drained glass noodles for about 5-10 minutes until slightly translucent. Remove them, wash in cold water, and toss with a splash of sesame oil to prevent sticking.
6. In a pan, add back your cooked veggies, noodles, and steak. Season everything with a touch of sesame oil, 0.5 tbsp sugar, 1 tbsp soy sauce, and sesame seeds.
7. Toss well to coat all ingredients thoroughly, and serve immediately!
