Carrot Ginger Dressing

1. In a blender, combine the roughly chopped carrots, sweet yellow onion, ginger, soy sauce, rice vinegar, and a pinch of salt. Pulse until a paste forms.
2. With the blender running on low, slowly stream in your neutral oil until a smooth dressing consistency is achieved. Adjust seasoning to taste; you can add more ginger for extra spice or sugar if you prefer a sweeter dressing.
3. Prepare the kale by de-stemming and roughly chopping it. If you don't have iceberg lettuce, you can squeeze the cleaned and chopped kale to soften it slightly.
4. Fold the prepared dressing onto the kale.
5. Top with a splash of sesame oil, a sprinkle of sesame seeds, and chili flakes for garnish before serving.
